Onion Roasted Chicken and Vegetables
2 envelopes onion soup mix
1/2 c. olive oil
1 t. garlic powder or granules
8 thighs, breasts, or a combination, large breasts cut into thirds, etc. depending on the number of people you are serving:
2 small sweet potatoes, peeled and chunked large
2 small yams, peeled and chunked large
2 medium red potatoes, unpeeled and chunked large
2 Yukon gold potatoes, unpeeled, and chunked large
12 + baby carrots
Directions:
In large bowl combine all ingredients and toss until well coated.
Put all into a 13x9 pan and bake uncovered at 450 degrees for 25 minutes.
Remove from oven, stir, and bake 20 minutes longer.
